Ice cream for breakfast
On a hot summer day, is there anything better than a big bowl of ice cream? (No.)
It’s been so hot and humid here lately that even my usual bowl of oats doesn’t sound appealing. Always delicious, but not always refreshing.
Enter, breakfast “ice cream,” my new favorite way to start a summer morning. Quick and easy — you only need four ingredients — the only downside is having to use the blender when everyone else in the house is asleep. Oops.
The night before, stick a banana in the freezer. In the morning, peel the frozen banana carefully with a sharp knife and chop into pieces. Put in the blender.
Add in a half cup of milk (I use plain almond milk).
Plus a big scoop of peanut butter. Breakfast needs to stick to your ribs!
Blend, blend, blend.
The finished product should have the thick, creamy consistency of frozen yogurt.
You’re not quite done yet. What’s a sundae without nuts on top? Sprinkle on about 1 tbsp of wheat germ.
Wheat germ has a fantastic nutty taste and is a great source of Vitamin E, folic acid and omega-3 fatty acids.
Et voila!
You’ll think you’re having a rich ice cream sundae for breakfast but actually enjoying a meal packed with fiber, vitamins and protein. Mmmmmm!

That sounds amazing! Overnight oats are what I usually think of when I think of a nice cold breakfast for summer.
And this would be easy for me to make since I always have sliced frozen banana in the freezer to throw into smoothies.
Although I don’t have wheat germ. So that’d definitely need to be purchased.
It’s delicious without wheat germ, too. You could always throw a few chocolate chips in.
It’s a cool breakfast, really good for the summer. I think kids will love it.

I like to peel my bananas before I freeze them because I find them tough to peel when they’re frozen (they make my hands so cold!)

I’ve been eating something similar to this…in fact, I had it for dinner the other night! So good in the summer!

Btw, why won’t you peel your bananas before freezing them? It’s so much easier + you won’t cut yourself in the morning in your sleepy state

I third the motion for you to start peeling those bananas first! I quickly learned that it is wayyy more efficient. My favorite breakfast “treat” is a chocolate green monster. So delicious, yet full of spinach! You really can’t go wrong.
That sounds really good. I’ve been getting into smoothie-making lately, but I make them the night before so I don’t wake my roommates with the blender (I wake up much earlier than everyone else). This morning I made one with peaches, banana, rice milk, and honey, and topped it with sunflowerbutter and cereal. Delicious, and a treat!

I really want to try it, except that I don’t have a food processor! I don’t know if it would work the same with a blender.
Also, have you tried the unsweetened Almond Breeze? I think the kind you photographed was original in the teal box, which is usually sweetened. They have unsweetened original AND vanilla (I think chocolate too, although I’ve never tried it). No big deal, but I am trying to cut back on unnecessary sugars, so I love that they have unsweetened versions.
I want to try unsweetened but it’s always out at the store. All the other kinds are fully-stocked but the unsweetened is totally gone.
haha I have the same problem with using the blender. I always want to make smoothies in the morning but I don’t want to emit jet-engine sounds from the kitchen early in the morning
