Eggplant, take 2
I had leftover marinated eggplant after grilling last night and, as part of my September Challenge to eat more creative dinners, knew I wanted to eat it in a different way.
Enter, easy eggplant pizza.
Seriously, guys, if you’re not using the Trader Joe’s pizza dough, you’re missing out. I portion mine ahead of time and then freeze all of the dough. It’s easy to just take out the amount I want for dinner that night and let it defrost while I’m at work.
Tonight’s pizza was topped with marinated eggplant, spinach, onion, green pepper, diced tomatoes, fresh basil & dill and chili powder.
While jogging after work, I was having serious cravings for Mexican food (Brittany was talking up all the good food she had while vacationing in North Carolina) but as usual, I’m always glad when I stick to the original plan and cook instead.
Plus, now I can start meal planning something Mexican to cook tomorrow night. Total win-win for both my budget and my waistline.
Before dinner, I ate a big spinach salad in one of my new bowls from HomeGoods.
Love the color and the cabbage-esque design! And a total steal for $3.99, too! I’ll reveal the rest of my HomeGoods finds later this week.
Just ate an apple cinnamon muffin with Amish market apple butter — you can never have too much apple! — and settled down to watch ‘Glee’with the roomie. It’s basically what we both wish had school had been like, with people breaking out in song walking down the hall.
Although now that I think about it, I do remember breaking into song more than once in the middle of the halls. Maybe our school was a little like ‘Glee’!
How do you reuse leftovers? Do you eat them the same way or come up with new combinations?




I agree- there’s no such thing as too much apple!! I have at least one a day. After all, it keeps the doctor away.
